Remarkably the only taste yet discovered that we do not experience taste fatigue from is -- plain old vanilla.

Vanilla - Not So Plain After All

Vanilla has gotten a bad rap over the past 100 years or so. It has come to mean "plain" or even "uninteresting and unexciting." It wasn't always this way. Before 1900 vanilla was exotic and mysterious.

The "Queen of Spices," as it was known in the 19th century, is a fairly recent addition to the spice world. It is native to Central America, so was completely unknown to the old world before 1492. By contrast, Black Pepper, known as the King of Spices, originated in the mountains of Southern India and had already made its way to Northern Europe over 2,000 years ago.

The culprit for vanilla's bad name is most likely -- ice cream. Vanilla ice cream, so delicious by itself, is used as a base for probably 99% of the other flavors we enjoy. Add chocolate powder or syrup to vanilla and you have chocolate ice cream. Add strawberries to get strawberry ice cream.

But few people realize or stop to think that vanilla is added to cream to get vanilla ice cream. Vanilla isn't an absence of flavorings -- it IS a flavor. Try making "vanilla" ice cream sometime without vanilla and you will quickly see the difference.

You Never Get Tired of Vanilla

As stated above, vanilla is the only flavor we never get tired of eating.

Mouth fatigue is a phenomenon well-known to professional chefs and tasters. It is a process that happens in your mouth as you continue to eat a particular food or taste. Your mouth get "used" to the flavor and you start to taste if less and less. Or, turned around, you need more and more flavor to get the same effect. (Don't worry, except with certain tastes -- like salt -- it's not something that tends to last more than that particular sitting. You'll be back to normal tomorrow no matter how much chili you eat at the cook off.)

Speaking of chili, mouth fatigue is a very real threat to professional tasters and why they have mouth cleansing cracker or bread between each bite. Professional wine tasters know all about this too.

However, you never experience mouth fatigue with vanilla.

Instead of thinking of vanilla as plain and unexciting, this fact alone should make it one of the most desirable tastes.

By the way, no one really knows why -- or has come up with -- a really good explanation as to why vanilla has this property. The current popular guess is that it the closest natural flavor to the taste of breast milk. I'll have to take their word for that. I can't remember that far back.
