Scoby Starter
If you have ever tried Kombucha Tea, you know it is an acquired taste. Store bought Kombucha can be found in many health food, and green grocers through out North America. There are tons and tons of people who swear by the healing properties of this ancient culture that has been passed down through 100's or thousands of years. While there are stories of cancer cures, and grey hair turning to its natural color, one thing is for sure, Kombucha Tea can be a healthy addition to your diet.
Buying the tea is quite expensive. You can expect to pay $2-$5 usd for a one serving size. So if you crave Kombucha, you may want to brew some at home. This article gives you the basic ingredients you will need for home brewing. First you need a live Kombucha culture or scoby, along with what is called starter tea. This is very strong Kombucha.
Once you have these two main ingredients, you are off to the races so to say. Now you need some green or black loose tea, sugar and water. That's it! Those simple ingredients are all that is needed for successful home brewing.
Here is the basic steps that you then follow:
1.) Boil up a big pot of water and steep strong tea for 8-10 minutes - I use jumbo home made tea bags to make this step quite easy. No Messy tea leaves to clean up.
2.) Dissolve one cup of sugar in 10 cups of the strong brew tea.
3.) Let all of this cool to room temperature.
4.) Put your culture and starter liquid in a big glass (must be glass) container and gently pour the COOLED tea over the top.
5.) Place a paper towel over the top and secure with a rubber band.
Now the brewing begins. Place your Kombucha in a warm dark cupboard and check on it after day seven. Have a little taste. This is the best indicator to know if your tea is ready or not. Still sweet? Not done, taste like vinegar? Woops, too long. You get the idea, you have to monitor as you go to get the right flavor. Once this is achieved, you simply strain off the tea and bottle it.
That's it - you just made a batch of homemade Kombucha!!
